This is my favorite cheese-making book for beginner cheesemakers. If you want to look into all natural cheeses, I cannot recommend David Asher's All Natural Cheesemaking book enough. Kate from Venison for Dinner also shares some dairy recipes (and her honey cookies are AMAZING! Perfect for dunking into your raw goat milk.)
Homesteading Family has made an online Dairy Class that I so highly recommend.
